By making it yourself, you ensure the use of natural ingredients without any artificial additives. Here’s a simple recipe for a fragrant homemade chicken liver pâté.
Ingredients:
500 g chicken liver.
100-200 g butter.
Vegetable oil (for frying).
1 onion.
1 carrot.
5 black peppercorns.
2-3 allspice berries.
1-2 bay leaves.
Salt to taste.
Cooking Instructions:
First, slice the onion into half-rings and sauté it in a small amount of vegetable oil until it becomes translucent.
Grate the carrot on a coarse grater and add it to the onion. Sauté everything together until the carrot is soft.
Then, thoroughly rinse the chicken liver, pat it dry with paper towels, and cut it in half.
Remove the onion and carrot from the pan. Sauté the liver in the same pan, turning it to cook all sides evenly. Add the black peppercorns, allspice, bay leaves, and salt to taste.
Return the onion and carrot to the pan, add 1 tablespoon of oil, and cover with a lid. Let it simmer on low heat for about 20 minutes.
After this, remove all the whole spices so they don’t end up in the pâté.
Pass the liver and cooked vegetables through a meat grinder using the finest attachment.
